Hand crafted wines begin with a dream, from the beginning of the season when the vines lie dormant, until long after harvest, our dream weaves on. Next vintage always lies ahead, as past vintages transform and evolve in bottle, reminding us that nature is the ruler, and we are but dreamers.
In Dreams is a project that has been evolving for the past 11 years. It is a long story that began as a conversation over the phone in Portugal, moved to a chat over a coffee in Armadale, skipped over the ditch to Central Otago and finally came to fruition in the Yarra Valley in 2013.
“Spiced red berry compote, raspberry and strawberry with fresh figs and stewed rhubarb. Red currant leaf, rosemary and wet leather. There is a lot happening here for the price point and a moreishness to the juicy palate. This is indicative of the Yarra Valley’s formidable Pinot Noir attractiveness. Serve with Chinese BBQ pork and sticky rice.”
